Roast sweet potato in oven. Microwave walnuts to toast (could take
up to a minute but watch them so they don't burn!) Mix cottage
cheese, vanilla, cinnamon. Slice open roasted sweet potato and top
with cottage cheese mixture. Top with toasted walnuts and
another dash of cinnamon. Can also add light maple syrup, agave,
stevia, or sweetener of choice. Heat nut butter in microwave until
it's thin and drizzle on top.
