2 cups of vegetables, chopped (zucchini, onion, pepper, pea pods,etc) (WIC food)

1 cup cooked rice (WIC food)
|
|
1 cup chopped tomatoes (WIC food)

1 Tbsp vegetable oil
|

Instructions |
|
|
Heat 1 Tbsp of vegetable oil in a large skillet. Add chopped vegetables.
|
|
|
Stir and cook vegetables until slightly soft, about 2-3 minutes. Add small amount of water if needed while cooking.
|
|
|
Add cooked rice and tomatoes to cooked vegetables in skillet. Stir and cook for 1 minute, then serve.
