Measure flour into large bowl. Add water, yogurt,
eggs, yeast, nigella seeds (opt.) and salt to make a
soft dough.
Use a little oil on your hands to work dough into a
ball. Top ball with oil. Let rest covered 15-20
minutes.
Divide dough into 16 - 20 portions and form into
balls with a little flour on your hands. I put the
balls on baking sheets. Let rest 20 minutes.
You may cook the Naan in the oven on broil or on
the stovetop in a skillet. The stovetop gives the
best taste. Roll dough into an oval shape until
they're fairly thin but can still fit in the
skillet. Heat in skillet over md. high until
little bubbles form then turn. If using the
broiler, place on a baking sheet and flip after
about 2 minutes (keep an eye on them). Broil on
the other side about 30-40 seconds. Brush with
garlic butter for garlic naan or just butter. Keep
covered under a towel and serve warm.
