Bring All Ingredients to room temperature.

In a blender, break the egg and add lemon juice. Allow egg and lemon juice to come to room temperature (about 30 minutes.)

Add the mustard, salt and 1/4 Cup oil to the blender. Blend on medium until ingredients are combined. Now very slowly drizzle in the remaining 1 Cup oil. It should take 2 or 3 minutes to add the cup of oil.

|
Transfer mayo to a container with a lid. Mark the lid with the expiration date on the egg container. That is when your mayo expires.
