     Mini Pavlovas

4 egg whites
1 cup (215g) caster sugar
2 tbs orange blossom water/ or vanilla
1 tbs cornflour

Preheat oven to 120 degrees. Line an oven tray with baking paper. Use an electric mixer to beat egg whites in a clean, dry bowl until soft peaks form. add the sugar 1 tablespoon at a time, beating well between each addition. Continue beating until sugar dissolves and mixture is thick and glossy. Add the cornflur and half the orange blossom water and use a metal spoon to fold until just combined.
Spoon 4 portions of mixture onto the tray. Use a knife to smooth the surface.
Bake for 1 hour or until dry on the surface. Turn the oven off and set aside, with the door aja, for 1 hour until cooled to room tempreture.
Decorate with cream and fruiit of your choice.
