4 eggwhites
1 cup (215g) caster sugar
1 tbs cornflour
2 tbs orange blossom water/ or vanilla

Preheat oven to 120 degrees. Line an oven tray with baking paper. Use an eletric mixer to beat eggwhites in a clean, dry bowl until soft pecks form. Add the sugar, 1 table spoonful at the time, beating well between each addition. Continue beating until sugar dissolves and mix in thick and glossy. Add cornflour and half the orange blossom water and use a metal spoon to flod until just combined.
Spoon 4 portions of mixture onto the tray.Use a knife to smooth the surface.
Bake for 1 hour or until dry on the surface. Turn the ovan off and set aside, with the door ajar, for 1 hour or until cooled to room temperature.
Decorate with cream and fruit of your choose.
