In a pan heat olive oil and add peppers and onions cook for 2-3 minutes until tender. In another pan lightly sprayed with non-fat cooking spray set down the tortilla. Spread the cheese grilled chicken cooked onions and peppers on top. When the cheese is just beginning to melt fold over. Cook on medium heat for a minute or so flipping half way through. Slide the quesadilla onto a plate and serve with salsa, sour cream & side salad
