Preheat a large non-stick fryig pan on medium heat. Lightly coat with olive oil cooking spray. Whisk egg whites, eggs, and grate mozzarella cheese together in mixing bowl. Pour egg mixutre in pan. COok for a couple minutes until the bottom is golden brown. Flip the omlet and cook until the other side is golden brown. While omlet is cooking, in separate bowl, add spring greens, avocado, nuts, oil, salt and pepper. Toss lightly to mix the ingredients.
