Bring a pot of salted water to a boil and cook pasta according to directions.
In a small pot over medium heat, add balsamic vinegar and brown sugar. Bring to a boil and immediately reduce heat. Simmer to allow to thicken. Watch carefully so it doesn't thicken too much. Should be the consistency of syrup.
When pasta is cooked to al dente, drain-rinse-drain and add diced tomatoes and fresh tomatoes.
Add to bowls and drizzle each serving with some of the balsamic reduction. Finish with basil and fresh mozzarella.
Chicken or Shrimp can be added. Serve with bread, if desired.
