1) Put peppers upright on a microwave plate. Mix all ingredients except ketchup. Spoon loosely into peppers. Generously pour ketchup on top of each pepper and cover with plastic wrap.
2)Cook on high 20-25 minutes until peppers are tender and mixture is done. Remove plastic wrap and top with cheese, if desired.
