Saute the onion, celery, carrot, and garlic in olive oil until onion
is translucent. Add chicken, chicken stock, half and half, salt
and pepper, thyme (and frozen spinach). Heat to boiling then
add gnocchi. Gently boil for 4 mins. then turn down to simmer
for 10 mins. (Add fresh spinach here and cook for another 1-2
mins until spinach is wilted.) Serve!
