Binder- 1 c. bread crumbs, uncooked rice, or instant potato flakes
1-2 c. vegetables (shredded carrot, frozen spinach, kale/swiss chard, bell peppers, mushrooms,
shredded zucchini, sauteed celery
Mix in (Optional)- 1/2 c.
raisins, sun-dried tomatoes, cooked bacon, pickles, green chiles/jalapenos, walnuts,
roasted red peppers, shredded cheese
1 c. grated onions
1/4 c. ketchup
2 T. chopped herbs (parsley, basil, chives
2 eggs
1 T. Worcestershire sauce
1 garlic clove, minced
1 1/2 t. salt
1/2 t. pepper
Instructions
Preheat oven to 350 degrees. Mix meat, binder, vegetables, mix-in, grated onions, ketchup, chopped herbs, eggs, Worcestershire sauce, garlic clove, salt and pepper.
Bake in oven for 30 mins. While baking, make glaze.
Glaze Choices- Classic (1/4 c. ketchup, 2 t. brown sugar, 1 t. Worcestershire sauce) Garlic Herb (1/4 c. ketchup, 1 T. balsamic vinegar, 2 t. brown sugar, 1 grated garlic clove, 1/2 t. Italian seasoning) Spicy BBQ (1/4 c. bbq sauce, 2 t. honey, 1 t. chipotle chili powder, 1 t. cider vinegar) Tangy (1/4 c. ketchup, 2 T. apricot preserves, 2 t. soy sauce, 1 t. white vinegar, 1 t. ground ginger)
After 30 mins. take meatloaf out, put glaze on, and bake for 25 mins. more. When finished, let rest for 10 mins. before serving.
