Take out both racks in the oven. Keep one out for the bacon. Line the second rack with foil to catch the grease. Place the foiled rack back in oven and preheat oven to 400 degrees F.

In a shallow dish, mix the bacon with the Dijon mustard.

Combine all the dry ingredients in a separate bowl. Dredge the bacon slices in the dry mixture or sprinkle the dry mixture on bacon. Arrange the bacon on the first cool rack.

|
Place bacon in oven in the middle of the oven and bake until crisp, about 20-23 minutes. Do not bake any longer or it will start to burn. Transfer to plate and serve.
