     Mini Chocolate Crusted Cheesecakes

3/4 cup Chocolate Wafers (ie. crushed Oreos)
1 (8oz.) pkg fat free cream cheese, softened
1 (8oz.) pkg reduced fat cream cheese, softened
1/2 cup Splenda
3 large Eggs, separated
1 tsp. vanilla
1/2 cup fat free sour cream
1 Tbsp Splenda
1/2 tsp vanilla

Preheat oven 350 degrees. Lightly spray miniature muffin tin with Pam. Sprinkle each muffin cup with 1 tsp. chocolate wafer crumbs. Turn pan upside down and discard excess.
Beat cream cheese on high until creamy; gradually add 1/2 cup Splenda and beat about 2 minutes. Add egg yolks and vanilla; beat at low speed just until blended.
Beat egg whites until stiff peaks form. Gently fold into cream cheese mixture; spoon into prepared pans. Bake 15 minutes; spoon about 1/2 tsp. topping. Bake additional 5 minutes. Remove to wire racks to cool. Chill thoroughly before removing from pan.
Topping- combine sour cream, 1 Tbsp Splenda and vanilla.
