     Mango Salsa

Ingredients
2 ripe mangos, peeled & cut off the pit into ½ inch cubes
1 tablespoon (T) grated fresh ginger root
1 orange, peeled & cut away from membrane, cut in similar size to mangos
1 sweet red pepper, seeded and chopped
1 tablespoon (T) fresh lemon or lime juice
 

Instructions
Below is a very simple recipe that reminds me of my family. It is a fruity salsa that is great to eat alone, or serve over fish. I’m not sure where the original came from & proportions can be modified to taste. This is best with grilled salmon.
Combine, cover, and chill ingredients to blend flavors. You can add pineapple (fresh or canned), chopped cilantro, and/or orange zest to taste, if you choose. The more orange juice that is captured, the better the salsa tastes. For a little extra zest, you can put in a small bit of Cointreau (orange liqueur).
