      Cornbread Muffins

1 c cornmeal
3 c all purpose flour
1 1/3 c sugar
2 tbsp baking powder
1 tsp salt
2/3 c vegetable oil
1/3 c melted butter
2 tbsp honey
4 eggs, beaten
2 1/2 c whole milk

Preheat oven to 350F. Grease a 9x13 pan or prepare muffin pan.
In a large bowl, stir cornmeal, flour, sugar, baking powder and salt. Pour in oil, melted butter, honey, eggs and milk. Stir until just moistened.
Pour batter into pan or muffin cups (fill 2/3 full). Bake at 350F for 45 minutes or until turns golden and starts to show cracks. Remove and cool.
Serving Suggestions
Serve with whipped butter and honey.
