     Ricotta Cake

2 Pounds Ricotta cheese, part skim
4 Eggs
3/4 Cup Sugar
1 Teaspoon Rum or
2 teaspoons Kaluah
1 box Yellow Super Moist Cake Mix
(buy one that calls for added eggs and oil)
Confectioner's sugar (optional)

Preheat oven to 350 degrees. Grease and flour a large 13-inch x 9-inch x 2-inch baking pan or as I prefer, a glass baking dish. Beat together the ricotta cheese, eggs, sugar and seasoning until creamy and set aside.
Be sure you have a a cake mix that calls for adding eggs and oil and not butter. Prepare cake mix according to directions on box. Pour into prepared baking pan. Add ricotta mix by the spoonful. Do not pour in.
Bake for 1 hour or until tooth pick inserted into center comes out clean. Cool on a wire rack. Before serving, cut into squares and sprinkle with confectioner's sugar. if desired.
