Preheat oven to 400 degrees. Season the pork with
salt and pepper on all sides. Preheat a large
saute pan over high heat and add the oil. Sear
the pork on both sides, cooking for about 1 1/2 -
2 minutes per side. Do not force the meat to turn
if it doesn't give easily when you first go to
move it. Remove from heat and set aside while you
make the glaze. In a bowl combine the molasses,
mustard, paprika, thyme, and garlic. Use a pastry
brush to coat the pork in the glaze and place in a
greased baking dish, pouring the additional glaze
over the pork in the pan.

The pork needs about 6 - 8 minutes in the 400
degree oven to finish cooking once they have been
seared. Brush the cooked glaze from the bottom of
the pan over the pork before serving. Pork should
be slightly peachy-pink in the center; if using a
meat thermometer, cook the pork until the internal
temperature reads 145 degrees, then remove from
the oven and let rest until the final temperature
reaches around 150 degrees. Great with Apple Onion Gravy and Mashed
