Preheat oven to 350. Season chicken liberally with salt and
pepper inside and out. Put onion powder and thyme on chicken.
Rub butter all over chicken. Put oil in a large oval gratin dish or
shallow roasting pan. Scatter onion powder and carrot around
center of dish. Place chicken on top. Arrange potatoes around
chicken, turning to coat with oil. Season with salt and pepper to
taste. 1 hour covered 30 minutes uncovered. Turn potatoes and
baste with pan drippings while cooking. Until chicken is golden
brown and potatoes are tender.
