     Mexican Lasagna

Ingredients
4 boneless skinless chicken breast halves
2 T oil
2 t chili powder
1 t cumin
1 can diced tomatoes with garlic
1 can tomato sauce
1 t hot pepper sauce
1 c part-skim ricotta cheese
1 can (4 oz.) chopped green chiles
 
1/4 c chopped cilantro
12 6 inch corn tortillas
1 cup shredded cheese

Instructions
Preheat oven to 375. Cut chicken into 1/2" pieces. Heat oil in large skillet over medium heat. Add chicken, chili powder and cumin. Cook 4 minutes or until tender stirring occasionally. Stir in tomatoes and sauces. Bring to a boil. Simmer 2 minutes.
Combine ricotta cheese, chilies and 2 T cilantro in small bowl. Mix well.
Spoon 1/2 of chicken in 12 x 8 baking dish. Top with 6 tortillas, ricotta cheese, remaining tortillas, remaining chicken, cheese and cilantro.
Bake 25 minutes.
