     Crab Cakes

3 tbsp. butter
3 tbsp. mayonnaise
1 tbsp. onion, chopped fine
1/2 tbsp. salt
1/2 tbsp. pepper
1 lb. crab meat ( canned tuna or salmon can be used)
1 cup bread crumbs
vegetable oil
2 eggs
1 cup flour
1 cup panko bread crumbs
2 tbsp. milk

Melt butter; let cool and add mayonnaise, onion, salt and pepper. In separate bowl combine crab meat and bread crumbs.
Combine mayonnaise mixture with crab meat mixture and form cakes. Mix milk and eggs in shallow dish.
Dredge cakes in flour, then egg mixture and then panko bread crumbs.
Heat oil in heavy skillet and fry crab cakes until golden brown. About 5 to 7 minutes per side.
