In one bowl, mix all the wet ingredients together until smooth.
In a separate bowl, sift together all of the dry ingredients.
Combine the wet and dry ingredients.
Fold in raspberries.
Fill muffin liners with batter all the way to the top.
Sprinkle with unsweetened coconut flakes on top.
Bake for 20-25 minutes.
