Preheat oven to 350.
Grate the apples using the shredder disk on the food processor. Measure out 2 cups of the shredded apple and set aside.
Replace the shredding disk with a chopping blade and put almonds cinnamon, coconut oil and vanilla in the work bowl. Pulse everything until coarsely gorund.
Combine apples, almonds, shredded coconut, and salt in a large bowl and stir to combine.
Add eggs and mix evenly.
Place a sppon full of mixture on a cookie sheet and flatten into cookie shape.
Bake in the oven for 25-30 minutes, rotating at the half way mark.
Let cool and enjoy!
