     Apple Cheddar Cupcakes

Ingredients
Cheddar Streusel Topping
1 cup all-purpose flour
1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
6 tablespoons butter, softened
1/2 cup sugar
1/4 cup packed brown sugar
1 egg
 
1 teaspoon vanilla
1/2 cup milk
1 cup finely chopped peeled Granny Smith apple
1/2 cup (2 oz.) finely shredded sharp Cheddar cheese
Instructions
1) Preheat oven to 350 F. Line 36 mini(1 3/4-inch) muffin cups with paper baking cups. Prepare Cheddar Streusel Topping.
2) Combine flour, baking powder, baking soda and salt in small bowl; mix well. Beat butter, sugar, and brown sugar in large bowl at medium speed until creamy. Add egg and vanilla; beat until well blended. Add flour mix and milk; stir just until combined. Stir in apple and cheese. Spoon evenly into prepared muffin cups.
4) Sprinkle evenly with Cheddar Streusel Topping.
5) Bake 15 minutes or until toothpick inserted into centers comes out clean. Cool in pan 5 minutes. Remove to wire rack; Serve warm or at room temperature.
