Mix all ingredients in blender so there aren't any lumps. Heat a 12 inch skillet or electric skillet to 350 degrees. Grease skillet. Pour about 1/2 c. batter into skillet and tip skillet to cover the bottom. When batter is set (about 1 min.), cut in half with a spatula and flip the pancake 1/2 at a time. Serve with butter and syrup or sugar. Or sour cream, powdered sugar, and thickened warm fruit (blueberries, strawberries, etc.)
