     Creamy Alfredo Pasta

1 TBSP Butter
2 tsp all purpose flour
1 cup milk
1/4 cup shredded cheddar cheese
salt, pepper and red chilli flakes to taste

In a medium saucepan, melt 2 TBSP of butter over medium low heat. Once butter is melted, stir in the flour and keep stirring for about 1-2 minutes until all the flour is incorporated. The flour/butter mixture should be smooth and no clumpy
Add the 1 cup of milk and start whisking. Make sure you scrape the side of the saucepan to mix in all the flour. Keep whisking until your sauce thickens, about 3-5 minutes. It may take longer depending on your stove.
Once your sauce has thickened, mix in the 1/4 cup of cheese. Turn off the heat
Stir in salt, pepper and red chilli pepper flakes to taste. Pour the sauce over any type of pasta and cook over low heat for about 5 minutes. Serve warm with a nice chicken or fish dish
