In a medium saucepan, melt 2 TBSP of butter over medium low
heat. Once butter is melted, stir in the flour and keep stirring for
about 1-2 minutes until all the flour is incorporated. The
flour/butter mixture should be smooth and no clumpy
|

|
Add the 1 cup of milk and start whisking. Make sure you scrape the
side of the saucepan to mix in all the flour. Keep whisking until
your sauce thickens, about 3-5 minutes. It may take longer
depending on your stove.

Once your sauce has thickened, mix in the 1/4 cup of cheese. Turn
off the heat
|
|
|
Stir in salt, pepper and red chilli pepper flakes to taste. Pour the
sauce over any type of pasta and cook over low heat for about 5
minutes.
Serve warm with a nice chicken or fish dish
