     Spudnuts

Category   Desserts - Breads
Sub Category   None

Ingredients
3 cups milk scalded with
3/4 cup sugar
3/4 cup margarine
2 tsp salt
1 cup instant potatoe flakes or l large potatoe cooked and mashed.
Cool this mixture.
Dissolve 3 tbs yeast in 1 cup warm water and 1 tsp sugar.
Add 3 cups flour to cooled milk mixture and mix.

Add 3 or 4 eggs and dissolved yeast and mix.
Add enough more flour to make a soft dough (3 or 4 more cups).
Let rise twice then roll and cut into doughnuts - about 1/2 inch thick. Let rise again until double
in bulk. Fry in hot oil. Glaze while still hot.
Glaze-
3/4 pkg (2 lb) powdered sugar
1 tsp salt and 1 tsp vanilla

Instructions
Enough boiling water to make a consistency about like cream. If doughnuts appear sticky, glaze is to thin -- add more powdered sugar. Dip doughnuts and let drip from a chop stick into the bowl of glaze.
