     Spanish Chicken and Rice

Ingredients
1 T olive oil
1 lb. boneless skinless chicken breasts, diced
1 medium onion, chopped
1 red bell pepper, chopped
1 C chicken broth
1 C (15 oz) Spanish-style diced tomatoes, undrained
1 C frozen peas
1 t garlic powder
1 t turmeric (optional)
 
2 C MINUTE White Rice, uncooked

Instructions
1- Heat oil in large skillet over medium-high heat. Cook chicken, onion and bell pepper until chicken is browned, stirring occasionally.
2- Add broth, tomatoes, peas, garlic powder and turmeric, if desired; bring to a boil.
3- Stir in rice. Reduce heat to low; cover. Cook 5 minutes or until rice is tender.
