     Zucchini Bread

3 eggs, slightly beaten
1 cup vegetable oil
2 cups sugar
2 cups zucchini, grated
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon baking powder
1 cup chopped nuts (optional)

Pre-heat oven to 350. Combine eggs, oil, sugar, and grated zucchini. Sift together flour, salt, cinnamon, and baking powder. Make a well in center. Add the zucchini mixture and blend until dry. Ingredients are moistened. Add nuts. Pour into greased or sprayed pans. Makes 2 large loaves or 4 small loaves. Bake about 40 minutes (large loaves) or until toothpick comes out clean.
