Place the zest of one lemon in a mixing bowl. Squeeze juice of all three lemons into bowl and add onions to soak for five minutes.
Drain and rinse all beans and all to dry in colander for 10 minutes. Add sweet corn to colander to drain.
Add cilantro, orange pepper, jalapeno, tomatoes, and green onions to bowl. Add beans, corn, olive oil and vinegar to bowl and mix well. Add kosher salt and coarse ground pepper to taste. Refrigerate and serve after six hours of marinating.
