     Tomato Mushroom Pearl Pasta

Ingredients
1/2 of medium red onion, 1/2 inch diced
1 teaspoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon minced garlic
½ teaspoon chopped thyme
8 ounce package of mushrooms, quartered
1 teaspoon soy sauce
¼ cup diced tomatoes
 
1 teaspoon chopped parsley
1 tablespoon chopped basil
1/8 teaspoon Kosher salt
Black pepper to taste
1 cup of pearl pasta, cooked (Israeli cous-cous)
Kosher Salt

Instructions
Preheat sauce pan with 1 ts olive oil on medium heat. Add onions and cook for 8 minutes. Add balsamic vinegar and stir frequently; cook for another 2 minutes. Transfer to large bowl and set aside.
Start boiling salted water for pearl pasta.
Reheat sauté pan with 1 Tb olive oil on medium heat. Add garlic and thyme and cook for 1 minutes, stirring frequently. Add mushrooms and cook for 6 minutes, stirring frequently. Stir in tomatoes, cook for 2 minutes. Stir in soy sauce and cook 1 minute. Remove pan from heat and allow to cool.
Cook pearl pasta according to package directions. Drain water and rinse with cool water if eating cold, don't rinse if eating hot. Combine all reserved ingredients together with parsley, basil, cooked pearl pasta, salt and black pepper and mix well. Dish can be served hot or cold.
