     Harvard Oatmeal Bread

2 1/2 tsp salt
4 T butter
1/2 cup honey
1 cup old fashioned or thick oats
2 cups boiling water
3 packages yeast
6 - cups flour
1 stick butter

Mix salt, 4 T butter, honey and oatmeal into boiling water. Soak 3 packages of yeast in 1/2 cup warm water. Stir in 2 cups flour to oat mixture. Add yeast. Stir in 2 more cups of flour. Knead in last 2 - cups of flour. Place in greased bowl. Turn once. Allow to rise. Punch down. Divide into 2 parts. Roll out to remove air bubbles. Roll up and tuck ends under. Place in well greased loaf pans. Allow to rise to 3/4 inch above pan. Gently slice down center to creat a split loaf. Bake at 325 for 50 minutes. Turn out and brush with utter for a soft crust.
