Shredded chicken breast/thigh (or what ever's in the fridge)
Hummus
Large flour tortillas
Grated cheese
Fresh tomatoes, diced
Sour cream
Salt and Pepper
1/2 teaspoon of oil
Instructions
1. Heat a large cast iron frying pan to medium high heat. Add a small amount of oil (about 1/2 teaspoon) and spread it around the bottom of the pan with a spatula (you could use butter as well).
2. Place your tortilla in your pan with what ever topping you want on it. Place another tortilla on top of this.
3. Once the bottom of your quesadilla is golden brown flip it over. Once both sides are browned take Quesadilla out of pan and enjoy.
