     Zucchini, Black Bean, and Rice Skillet

1 tbsp. canola Oil
1 1/2 c. quartered lengthwise, sliced zucchini
1/2 c. diced green bell pepper
15 oz. drained/rinsed Rosarita Premium Whole Black Beans
14 1/2 oz. undrained Hunt's Fire Roasted Diced Tomatoes with Garlic
3/4 c. water
1 c. instant white rice
1/2 c. shredded cheddar and monterey jack cheese blend

Heat oil in large skillet over medium heat. Add zucchini and bell pepper. Cook 5 min., stirring occasionally. Add beans, tomatoes, and water. Increase heat and bring to a boil.
Add rice. Stir well. Cover. Remove from heat and let stand 7 min. or until liquid is absorbed. Sprinkle with cheese.
