     Southwest Crockpot Egg Casserole

1 tablsepoon butter
1 pound pork sausage
1 onion, chopped (optional)
1 green bell pepper, chopped (optional)
2 (4 ounce) cans chopped green chilies, drained
2 1/2 cups grated Monterey Jack cheese (or cheddar) (10 ounces)
18 eggs

Grease inside of crock-pot with butter. Starting with sausage, layer meat, onions, peppers chilies and cheese, repeating the layering process until all ingredients are used.
In large mixer bowl, beat eggs with wire whisk or egg beater until combined, then pour over mixture in the crockpot. Cover and cook on low 7-8 hours. Serve with sour cream or fresh salsa.
You can also bake this in a 9x13 dish at 375 degrees for about 30 minutes.
