     Meatloaf Cupcakes

3 potatoes, peeled and chopped. I love using sweet potatoes.
1 1/2 lb leanest ground beef or turkey you can find.
1/2 C finely chopped or grated onion
1/3 Cup quinoa, GF oatmeal or GF cereal crushed.
1 egg
2 tbsp chopped rosemary
1/2 C almond milk or regular milk
1 tbsp butter
1 tsp of salt and pepper
1/4 C fresh chopped chives (optional)

Preheat oven to 350. Place potatoes in a saucepan and cover with water. Bring to a boil; cook about 25 or so minuets or until super tender.
Combine meat, onion, cereal or mix, egg and rosemary in a large mixing bowl; Mix well. divide mixture into 10 standard muffin cups that are lined with cupcake papers. Bake 25 mins or until cooked through.
Beat potatoes, milk, butter, salt and pepper in a large bowl with a mixer for about 3 minuets or until smooth. Place mashed potatoes into a sandwich bag and cut off a corner of the bag to make a quick piping style bag
Remove meatloaf cupcakes from oven and place on separate tray. Pipe mashed potatoes on top like you're frosting a cupcake and sprinkle with chives
Serving Suggestions
Probably one of my favorite meals ever. Turns out super cute! Pairs well with roasted veggies.
