     Sandy Pancakes

Ingredients
1 and 1/2 cups flour
2-4 tablespoons sugar
3 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
1 1/4 cups milk
2 tablespoons vegetable oil
 
1 teaspoon vanilla extract

Instructions
Combine flour, sugar, baking soda and powder, cinnamon, and salt in a mixing bowl and stir well.
Add vanilla extract, vegetable oil, milk, and egg to dry mixture and whisk well. If feeling too liquidy, sprinkle in more flour until thicker.
Pour in 1/4 a cup of pancake mix onto a griddle at a time.
Flip pancakes when bubbles begin to appear in the center and cook until golden brown on both sides.
