Preheat oven to 350 degrees F. Combine 1st 7 ingredients in a bowl and set aside. In a mixing bowl, beat butter with mixer for 30 seconds, add brown sugar and beat until well combined. Add eggs, one at a time, beating 1 minute after each. Add mixed dry ingredients from step 2 and apple sauce alternately to beaten mixture, beating on low speed after each addition. Stir in chopped nuts. Scoop into sprayed muffin tins. Bake 25 minutes or until done.

Candied Walnuts for Garnish-
Ingredients- 1/2 cup coarsely chopped walnuts, 1 tablespoon butter or margarine, 1/4 cup brown sugar
Directions- Melt butter in small skillet. Add walnuts and brown slightly. Add brown sugar and continue to cook and stir until walnuts are thoroughly coated and brown sugar has melted. Pour out onto wax paper or cutting board to cool, separating walnuts with spatula or spoon to keep them from sticking together. Cool completely and set aside for garnish.
Spiced Whipping Cream for Filling/Frosting-
Ingredients- 2 cups heavy whipping cream (chilled), 1 teaspoon pure vanilla extract, 2 tablespoons granulated sugar, 1 teaspoon cinnamon
Directions- Measure whipping cream, vanilla, and sugar into mixing bowl and mix slightly. Place in refrigerator for 20-30 minutes to chill along with whisk attachment. Remove from refrigerator and beat until soft peaks form. Add cinnamon slowly and mix in. Once cinnamon is completely incorporated, whip till stiff peaks form.
