1/3 c. butter, softened
1/4 c. sugar
1 egg
1 1/2 c. flour
1 pkg. (3.4 ounces) instant vanilla pudding
1 Tbs. baking powder
1/4 tsp. salt
1 1/4 c. milk
1/2 c. chopped walnuts or pecans (optional)
1/2 c. chopped walnuts or pecans (optional)
1/3 c. packed brown sugar
2 Tbs. butter, melted
1/4 tsp. cinnamon

In a mixing bowl, cream butter and sugar. Combine flour, pudding mix, baking powder and salt; add to the creamed mixture alternately with milk. Beat until blended. Stir in nuts. Fill paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 375 degrees for 20-25 minutes or until a toothpick inserted near the center comes out clean.
