     Pistachio Brittle

Ingredients
1 1/2 cups shelled pistachios
1 1/3 cups sugar
1/4 cup light corn syrup
2 1/2 T unsalted butter
1/4 tsp plus 1/8 tsp baking soda
1/4 tsp salt
 

Instructions
Preheat oven to 350 degrees. spread nuts in one layer on baking sheet. Bake until golden brown, about 10 minutes, stirring occassionally. Cool.
Butter baking sheet or line with a non stick liner. Place on cooling rack or trivet. Grease a spatula and set asided.
In large, heavy saucepan, combine the sugar, 1/2 cup water, the corn syrup and butter. Cook over medium heat, dtirring at first to dissove the sugar, until the mixture is light caramel in color, about 12 minutes. Remove from heat and shisk in baking soda, salt and nuts.
Working quickly with the buttered spatula, spread the mixture onto the prepared baking sheet. Let the brittle cool completely, then break into pieces.
