Rub beef well with seasonings. Place in roasting pan with rib side down. Roast for 1 hour at 375 and turn off oven. A half hour before dinner, cook an additional 30 minutes. DO NOT open oven until you are ready to eat. This roast will be brown on the outside and rare on the inside regardless of size of roast. If a more done roast is desired, the temperature should remain the same but the final cook time should be increased.
