1 C. Cream (or substitute 1 1/2 C. Evaporated Milk, 3/4 C. Water, and 3/4 C. Milk)
1-2 C. Sharp Cheddard Cheese, grated
Salt and Pepper to taste
Instructions
Saute in large soup pan: oil, onion, celery..simmer, add carrots ,broccoli, parsley.. simmer 5 -10 minutes. Add chicken broth, cover and simmer 15 minutes.
Meanwhile melt butter in a 2 qt. sauce pan. Stir in flour. Add while beating: milk, and cream. Heat, stirring frequently, till thick and smooth. Stir into simmering soup (may strain while adding if needed to avoid lumps).
Cook until vegetables are tender. Add cheese and salt and pepper to taste.
