     Sautéed Cauliflower with apples and pecans

Ingredients
1/4 toasted, chopped pecans
2 Tablespoons olive oil
1 small shallot, chopped
1 Fuji Apple, peeled and sliced thinly
1/2 teaspoon thyme
2 Tablespoons butter
1 head cauliflower cut into small florets
 

Instructions
Heat oil in large skillet over med-high heat. Add shallot and cook, stirring, until softened (3-4 min). Add the cauliflower and 1/4 teaspoon salt and pepper. Cook, tossing occasionally, until golden (4-6 min). Add apple, thyme, and 1/2 cup water. Cover and cook until cauliflower is tender (8-10 min). Stir in butter and sprinkle with pecans.
