     Adobo Chicken - Paleo

Ingredients
1/2 cup chopped onion
1 tbl chopped garlic
1/2 cup white viegar
1/2 cup tamari (gluten-free soy sauce)
1/4 Lime Citrus Ponzu
1 tsp black peppercorns
1 tablespoon red chili flakes
1 cup chicken broth
3 bay leaves
 
salt & pepper to taste
6 large chicken thighs

Instructions
Put all ingredients into a gallon zip lock bag and marinate for 1-3 hours. Turn bag often to mix ingredients.
Pour ingredients into a pot and bring to a boil. Turn down, cover and simmer for 30 minutes. Uncover and simmer another 20-30 minutes. Sauce will reduce and thicken.
