     German Apple Pancake

Ingredients
1 lb apples, cored and sliced (Granny Smiths are good)
1/4 c butter
1/4 c sugar
dash of cinnamon & nutmeg
Pancake:
3 eggs
3/4 c milk
3/4 c flour
1/2 tsp salt
 

Instructions
Melt butter in frying pan, add apples, sugar, cinnamon & nutmeg. Cook until tender but not mushy. (Sometimes I just dice the apples intead of trying to core/slice them)
Melt 1 Tbsp butter in 8x10 pan, place in 450oF oven to melt. Mix pancake ingredients (eggs, milk, flour and salt) and pour into pan. Bake 15 min at 450oF, then decrease heat to 350oF for 10 minutes-you can poke bubbles if any form.
After baking the pancake, pour in the apple mixture and enjoy.
