In a large pot of boiling water, cook 2 large potatoes, peeled and cut into chunks, with half a head of cauliflower, chopped. When the veggies are tender, about 20 minutes, drain well and beat with an electric mixer.
Stir in 2 T. butter and spread into a shallow 2 quart baking dish. Mix 4 T. dry bread crumbs with 2 T. grated parmesan; sprinkle on top. Bake for 20 minutes in a 350 oven.
