2 eggs

3/4 c oil
|

2c sugar

3 tsp salt

2c shredded zucchini (water and all, do not drain)

3 tsp vanilla

3c flour

1/4 tsp baking powder

1 tsp baking soda
|
|

Raisins and/or Coconut (optional)

Instructions |

|
Beat eggs until fluffy.
|
|
|
Add oil, sugar, and zucchini and mix. Add all other ingredients.
|
|
|
Pour mix into greased and floured loaf pans.
|
|
|
Bake for one hour at 350 degrees. Cool. Enjoy toasted with a dab of butter!
