Boil chicken.
Preheat Oven to 425 degrees Fahrenheit.
Grease a 13 x 9 pan

Melt butter. Add flour. Stir and cook for one minute.
Gradually wisk in chicken broth and water, cooking over medium heat.
Stir in chiles, sour cream, and add salt and pepper to taste (opt.)
Our 1/2 of the prepared sauce in the bottom of the pan.

Soften tortillas in the microwave for 10 seconds.
Combine chicken, 2 cups of the cheese with 1/2 cup onions (or as many as you want; sometime I omit the green onions if I don't have them)
Fill each tortilla with 1/2 cup of this mixture. Roll and place seam side down in the pan.
Once all are prepared, pour the remainder of the sauce over the tops of the rolled/filled tortillas

Cook for 20 minutes. Then sprinkle the remainder of the cheese (and onions, to garnish, if desired) on top. Bake for an additional 5 minutes.

|
We eat this without side-dishes. However, mexican rice or beans would go with this. We sometimes have salsa and chips.
