24oz Fresh or Thawed Haddock - Divided in 6 4oz filets
15 reduced fat ritz crackers
1.5 tbsps light butter
1 tbsp fresh parsley
1 tbsp lemon juice
Pinch of salt
Pinch of ground black pepper
Preheat oven to 500. In a ziplock bag or food
processor crush the ritz crackers into small
breadcrumb like pieces. Mix the ritz crackers with
butter, parsley, and lemon juice in a small bowl.
Salt and pepper your fish and then press the
stuffing on top. Place in the oven on a cookie
sheet for 4-6 minutes. The fish is ready when it
flakes away. For a thinner fish, you may not need
to cook for as long.
