     Southwest Egg Rolls

Ingredients
a. 1 tablespoon oil
a. 2 tables onion or green onion chopped
a. 2 table chopped bell pepper
b. 1/3 cup corn
b. 1/4 cup drained black beans
b. 2 tables sliced jalapeno peppers
b. 1/2 tablespoon parsley
b. 1 teaspoon cumin
b.1 teaspoon chili powder
 
b. 1/4 tea salt
c. generous cup of cheddar cheese (I like to use a spicy cheese)
d. 4-5 small tortillas
e. frying oil

Instructions
Heat the oil and sautee the A mixture for 5 minutes.
Add the B mixture and cook for around 5 minutes. Remove from heat and stir the cheese in to melt it.
Add mixture to tortillas and roll up. Freeze them for a couple of hours.
Heat deep fryer to 375 and do for 3 minutes to start and see how they turn out. Chop off the burnt ends/filling to serve
Serving Suggestions
With cilantro sauce
